Raw Apple Crisp

  
Apple Base:

2-3 Organic Granny Smith Apples
1 Tbsp. Coconut Palm Sugar Powder (see note)
1 Tbsp. Fresh lemon juice and/or ginger juice
1/4 tsp. Allspice
1/4 tsp. Nutmeg
1 tsp. Cinnamon

Wash the apples in produce wash or soak them in vinegar water for several minutes and rinse well. Cut the apples into small uniform cubes. Toss the spices, coconut palm sugar powder and the apples in a large bowl and let it marinate while you create the topping.

NOTE: Coconut Palm Sugar is a healthy alternative sweetener that has a lower glycemic index (GI35) than cane sugar, agave nectar or honey. It is even suitable for most diabetics! Organic evaporated palm sugar is especially high in minerals including potassium, magnesium and zinc, vitamins B2, B3 and B6. Palm sugar is unbleached, unfiltered and free of preservatives. The flavor has a slight coconut taste with overtones of caramel! I buy a bag of coconut palm sugar from the healthfood store and grind it up in a coffee grinder to make a fine powdered sugar. This can be used in place of the hard to find powdered maple syrup that is often called for in raw food recipes. A bag costs about $5 at Good Earth Healthfood stores. Topping:

1/2 C. Oats1/2 C. Slivered Almonds
1 heaping Tbsp. Coconut Palm Sugar Powder
1/2 tsp Maple Syrup (optional)
1 tsp Cinnamon
1/4 Allspice & Nutmeg
1 1/2 Tbsp Melted Coconut Oil
1/3 C. Raw Macadamia Nuts
2 Tbsp. Golden Raisins

Roughly chop the gluten free oats, Macadamia Nuts and Golden Raisins in a food processor with a small drizzle of Maple Syrup. Add the remaining ingredients. Add this mixture to a glass tray and mix well. Warm the topping in the oven or Excalabur dehydrator until lightly toasty and warm. Layer the topping over the cold apple mixture and enjoy!
This is one of the most delicious recipes! I'm so glad it is my first recipe I've added to my food blog! This recipe will feed one to two people. This is a great example of a "raw" dish that is still served warm.
